Does this mean "she is missing a leg"? "She does not have a leg" and "she has no leg" both sound terribly awkward...

It literally means 'She has no leg'. Note that the 'Sie' in German can refer to any feminine noun, e.g. 'die Kommode' - 'the chest (of drawers)'. So, we aren't necessarily dealing with a woman here (as the 'she' suggests). BTW: it actually would be more common to say 'Sie hat keine Beine'.

Given that this whole section concerns 'words used in the medical domain such as various parts of the body', I think it's pretty obvious that a woman is being referred to here...
