Wouldn't 이 be correct ? Why does it have to be 이번 whivh sounds really wierd in the literal translation.this time week sounds wierd.

What is the difference between 이번주에 and just 이주에?

It probably implies that compared to another week, this week the person studies a lot. If you just say 이 without 번 it's just a statement "i study a lot this week". But since we don't get any context it's kinda hard to get that i guess.

If you wanted to say "This time I study a lot" could you just omit the "주에" from this sentence ?

The "주", yes. That would be "이번에 저는 많이 공부해요.

shouldnt "study" be in past tense for this sentence to make sense grammatically in English?

There were two different versions of this sentence in the one lesson...I think I'll stick with the first one, and let a native speaker correct me if ever the time comes to use this. Cheers.
