Actually when you ask this question you refer to the New Year's Eve.

The correct version is "What are you doing for New Year's Eve?", which I heard maybe a million times in TV Shows. But nooo, Duolingo doesn't like the correct version.

"What do you do at New Year?" (normal English) rejected, "What do you do on New Year?" (Google translate English) suggested.

Why do i have to click on the words and have no option to type in answer? Is it because only 1 translation is accepted?

Can someone please explain the use of "de" here? I'd have chosen either "pentru" or "pe". :/

We always use "de" when we talk about the time of a special event. "Pe" and "pentru" are literal translations. We say "de ziua ta", "de Paşte", "de sărbători "

You should write here, in a row, ALL the "to do" list for at least 365 days, not only the resolutions!
