The correct version is "What are you doing for New Year's Eve?", which I heard maybe a million times in TV Shows. But nooo, Duolingo doesn't like the correct version.

"What do you do at New Year?" (normal English) rejected, "What do you do on New Year?" (Google translate English) suggested.

Can someone please explain the use of "de" here? I'd have chosen either "pentru" or "pe". :/

We always use "de" when we talk about the time of a special event. "Pe" and "pentru" are literal translations. We say "de ziua ta", "de Paşte", "de sărbători "
