What if i wanted to be specific that we are not currently eating animals? The given Dutch translation for "we do not eat animals" uses geen, but I'd expect the definitive statement to be "We eten dieren neit"

"We eaten dieren niet" is incorrect Dutch. Here's some information on how niet and geen are used in Dutch: https://www.duolingo.com/comment/3734833. "We eten momenteel geen dieren" or "Momenteel eten we geen dieren" is how you'd say we're currently not eating animals.

'We' is the unemphasised form of 'wij'. You can use either in this sentence.
