Could someone tell me if this sentence is grammatically correct please?
Meine Familie und ich werden im August nach Barcelona fahren.
Just be aware that if you are actually going to fly there (rather than drive) you could use fliegen or something generic like gehen or reisen.
I agree with everything you say, with just one correction: "Gehen" cannot be used to express "travel as a tourist".
"Wir gehen nach Barcelona" would mean
1) You actually walk there (i.e. expressing the manner of transport in the same way as "wir fliegen nach Barcelona" or "wir fahren nach Barcelona"
2) You move to Barcelona in order to spend your life there (either for a predefined time or without specification of the time).
For example, in my youth, I spent three months in France to continue my studies there. In that case, I would say: "Während meines Studiums ging ich für drei Monate nach Frankreich".
