Why isnt it du sind menschen?
Du is singular the other parts are plural
du bist menschen should work. bist is the to be form for du. I used Sie sind Menschen and that worked as well.

I guess that is the case since Menschen is plural. One person cannot be people I guess.

What do you mean? "Humans" and "Menschen" are always nouns. The sentence would be different were they to be used as adjectives.

Why is "Sie sind Menschen" correct? The only English translation for "Sie sind Menschen" is "They are Humans".
It can also be translated as you are humans (Sie with a capital S -- denoting "you" formal 2nd person singular or plural).
