'食' is the Classical word for 'eat', and is also used to mean this in Cantonese. '吃' is the usual word in Modern Mandarin, whereas '食' is only used in compounds.

"To celebrate one's birthday" is normally expressed as "过生日", so you would say "你今年(要)怎么过生日?" or something similar such as adding 打算.
