When to use definite articles before colors in Spanish?

Hi, just doing some reading - a book is telling me to use el/la/las/los before colors in Spanish, but i know it is not normal to say stuff like 'mi zapato es el blanco'. do you only use the definite articles before colors when the color is the subject of the sentence?

Colors in Spanish can be nouns or adjectives. Use articles when they are the noun:

"Mi zapato es blanco" (My shoe is white) vs "Mi zapato es el blanco" (My shoe is the white one).
