In Spanish daily conversation both sounds fine. Maybe iniciar sounds a little bit more formal.

Would 'iniciar' be to launch it and 'empezar' be to start reading it? Or am I over-rationalising?

You shouldn't be teaching your students to leave out "yo". It is proper Grammar, especially when learning a language. Later on, if they wanna leave out yo for simplicity, AFTER THEY HAVE MASTERED THE LANGUAGE, that is fine, but strictly not until then.
