Deliciae, do you know of any Norwegian magazines to do with wildlife/nature, current affairs or science that aren't too difficult? I'd like to take my Norwegian further now I've finished the Norwegian tree (please forgive me! I am SO PROUD of it I couldn't resist mentioning it!). I thought it would be nice to dip into shorter articles rather than whole books, and would like to subscribe to receive one by post.

You should be proud, it's quite the tree you've climbed. :)

You can try forskning.no, which is a science site targeted at the general public. By no means easy, but at least easier than most science content. There is some Nynorsk content as well, but mainly Bokmål.

Klar tale is a news site for Norwegian learners, so the content is easier. It's a good place to start, even if there's not much science related content to be found.

I'd suggest Einar Haugen's 'Beginning Norwegian - A Grammar and Reader' if you can get a hold of a copy. I have the third edition, and the stories are much on that order, and often quite amusing, too.
