Really confused with the addition of "já", why is it there if "I sold" is already stated by "jsem prodala"?

Notice that it is in the final position. It is strongly stressed, the focus of the sentence. It tells that it is I who sold them those jewels.

You could have just "Ty šperky jsem jim prodala.". That informs that the selling happened.

So, how would "Tyto šperky" differ in meaning?

these vs those

Tyto šperky would be these jewels, the jewels here or jewels in this picture or something like that.
