s - is what you normally write

ss - after short vowels (e.g. die Tasse, der Schlüssel, lassen, essen, müssen)

ß - after long vowels (e.g. die Straße, die Soße, der Fuß, die Füße, süßen) and diphtongs (e.g. heißen, schießen, außen)

Hope that helps a bit as a guideline :-)

what you normally write

well it depends on what sound is needed to make, like ß and ss are always /s/ but s can also be /z/ or /ʃ/

also ie isn't a diphthong, it's a long vowel

you're right about the diphtong, "schießen" should have been listed with the long vowel examples.
