You could not use "Ty sýr jíš?" You can say "Ty jíš sýr" or "Jíš sýr?" You do not say "You cheese" in English too.

"Ty sýr jíš?" is also a valid sentence but it would translate a little bit different.

Well, just a surprise: "You eat cheese?". Maybe one could also accept it here, but I am not fully convinced. It is certainly not black and white here.
