"Ugali" in English is "ugali" (and "champagne" in English is "champagne").

So im curious as to what this "stiff porridge" is, that seems to have such great powers! Is it wheat, teff, rice, oats, or what??? I know in Nigeria they make up a pretty stiff cream-of-wheat type stuff (farina), called fu-fu. Is it the same thing, or something different? Cuz farina is not really that healthy, it is pure carbs.

Cornmeal porridge. If you do a Google search for "ugali" you can even get the recipe.
