导 (dǎo) = to transmit/to lead/to guide
游 (yóu) = to swim OR to walk/to roam/to travel
导游 (dǎoyóu) = tourist guide/guidebook

We also saw 游 in:
- 漫游 (mànyóu) = roaming
- 旅游 (lǔyóu) = trip/journey/to travel
- 游戏 (yóuxì) = game
- 游泳 (yóuyǒng) = to swim

Can you just say "我们不要导游“?

Actually It's a little bit different. 我们不要导游 sounds like "we don't want a tour guide".

Why doesn't 导游 in this sentence need a measure word, 一个导游?

It doesn't provide any important information here, to the Chinese-speaking mind. Apart from enumeration or certain other contexts that are more or less idiomatic, Chinese can often dispense with "一个" and other such phrases where English uses an article.
