Is this not "puedes" because we are assuming the sentence reads, "Puede traer (usted) un poco de queso"?

Yes, you don't need the usted in cases where it's obvious.

Usmcsax81, you can also assume that you're saying this to a friend or to one of your kids, so "puedes" should be accepted, I think.
