Apparently in Swahili "gh" represents the sound labeled /ɣ/ in the IPA. This is the sound you get if you pronounce the "ch" sound in "Bach" or "loch" while activating your vocal cords. It's also the sound represented by "γ" in modern Greek. (also present in many other languages Wiki)
