because in Indonesian grammar tend to use format explained word (head) then modifier word.
"that/itu" is modifier or explaining to "dress/gaun". so it becomes as "gaun itu" = "that dress"
"gaun" seems to come from the English "gown" - does it mean "a woman's dress, either formal or informal"?
Yes, it's from "gown", English. Itself from old French.

European-style women's clothing.
So, not used for the traditional women clothes.
