Why piyo and not pio?
Both पिओ and पियो are fine. It's just a matter of regional differences in pronunciation.
The right way to say is piyo,with the "yo" being enunciated.. a lot ov people though,when they are speaking fluently, sound like they are saying pio..

When is नहीं used or when does it sound more natural and when मत?
मत is more natural when giving a command (पानी मत पि [don't drink water]) whereas when it's not a command, नहीं is mostly used (मैं पानी नहीं पी रहा हूँ [I am not drinking water]).
Here in the comment section on the app, when i want to hear the words, it reads the English ones. Surely that is a bug.

They are alternate spellings/pronunciations of the same word. People say one of the two depending on regional and personal preference. I've written a little more about this phenomenon here.
