I'm unsure why the boy is not the subject? Is there something about the -es form of urnes that always implies a separate subject?

It's Taobe itself that shows that it's not the subject. Because subject would be nominative and that would be Taoba. So Taobe is the accusative case, so it is the thing that is seen. Urnes is just 3. person singular, so he/she/it sees
