because they are chickens when young and hens when old :)

That's basically what Alex said. I've googled that and found out that a young hen (less than 1 year old) is called a pullet in English. Chicken is a very broad term and can refer to hens, roosters, pullets, etc. Chicken is also used to refer to food (never heard "let's eat some hen!" :p).
