For folk folk-rock, I highly recommend Annbjørg Lien ("Felefeber", "Prisme" are particularly good). She was a member of the group Bukkene Bruse which were excellent. "The Stone Chair", on Northside Records in the US, is excellent. Another good disc on Northside is Ånon Egulund "Ånon". Also, a very good compilation of hardingfele called "The Devil's Tune" (on Northside).
These are US labels and US titles. You may want to look for the Norwegian pressings if you live in Europe. (? there's no indication of where you live)
How about a fusion between Norwegian folk and bluegrass? Earlybird Stringband - "Lassofolk"
For some jazz fusion check out guitarist Tyrje Rypdal who has many, many recordings on the ECM label. Also saxophonist Jan Garberek

You might also like Glittertind. They're Norwegian folk metal with fairly easy to understand vocals (I mean they're not black metal vocals). And they also have an alternative folk album "Blåne For Blåne", which is pretty chill.
oh i love norwegian music! my favorite song at the moment is eventyret by neste planet, but my favorite overall artists are siri nilsen and kaja gunnufsen.
Not some specific music directly, but a nice place to discover Norwegian music is Norwegian radio at https://radio.nrk.no. There are different stations/streams with different kind of music. They also have podcasts if you like those =)
Off-topic – When looking for the link I discovered they have a 1:10 hour podcast about Game of Thrones' upcoming season... I know what I'm going to listen to tomorrow!! =)

I discovered it through Duolingo (the practice sentence, "Kanskje du ikke tenker pa meg heller"). I think someone in the comments wrote that the song is the whole reason they started learning Norsk and travelled to Norway.
Wikipedia writes: "Kaizers Orchestra was a Norwegian alternative rock band formed on 1 January 2000. They are notable for being among the first non-black metal Norwegian artists singing in their native language to become popular beyond Scandinavia. To other Norwegians, the band is instantly recognizable both because of their unique, unpredictable style, and because of vocalist Ottesen's distinctive Jæren dialect, shared by four of the other band members."
The dialect is interesting also. From near Stavanger or something. For instance, he'll pronounce the "g" in "meg".
