Question about "es" and "das"

For example:

"Es ist Wein." Shouldn't it be "Das ist Wein?" And if it's not, then why?

They are both right. If you want I can formulate two different contexts, but that is not necessary. In general you can use one for the other.

The main difference is that "es" means "it" and "Das" means "that" so "Es ist Wein." means "It is wine." while "Das ist Wein." means "That is wine."
