Du or Sie would be used to speak about a specific person. Man is used like 'one' is in English - e.g. "one cannot know the exact size of space", although it doesn't sound as old-fashioned in German. It's not strictly passive like vuojo says. You could easily say "trinkt man oft Bier hier?" - "Do people often drink beer here?"

Du is the singular you and man is the passive form.

Hier spricht man Deutsch. = German (is) spoken here.

Hier sprichst du Deutsch. = You speak German here.
