What is the different between both? How do I have to use them?

how many (quantity) = كم how (manner) = كيف The thing is with كم is that you can use it to quatify (un)countable objects/adjectives. Usualy (but that much), we add a specifier, i mean, it's like if you were asking in english "how much number of flowers do you have?" or "how much meters is it?" and with adjectives, it's like if you said in english "how much beautiful you are" (and it's not a question, it becomes an exclamation/"Ta3adjoub"). With "كيف", you ask only about manner or the state of someone/something '"how are you?" or "how did you build it?").

Thanks. I only was asking because in 'How old are you?' they use the word kam. Then it does mean 'How many (years) are you?'. I guess so.

Yes, "kayfa" is only used to ask about the state of somehting or the manner of accomplishing an action :) .
