Why didn't they just pick a word for cousin and be done with it?

I get that A Song of Ice and Fire focuses a lot on the complicated relationships between noble houses, some of them being complicated family relationships, but come on! Do we really need a different word for our father's younger sister's kid and our mother's older brother's kid? Maybe I'm just a culturally ignorant American, and there's some real life culture that does this, but I don't see the common man in fictional Valyria needing a different word for all the different types of cousins he has. A cousin is a cousin.

I wanted to finish this course, but honestly, I'm tempted to work on Klingon for a while...
