Quotidie is acceptable as well (cf. for instance the Gaffiot dictionnary https://www.lexilogos.com/latin/gaffiot.php?q=quotidie).

I thought putting "Mater" first would've been preferred. Am I missing something here?

Is "cotidie sacrificat mater" wrong?

Any order is fine for this sentence. Just report.

Is there a way to stop the box order in favour of writing the sentence out in Latin?

It gave a clue away by virtue of "Cotidie" having a capital C to start the sentence off. Otherwise I would have started with "mater cotidie sacrifat".
