How come gorm could be either blue or green?

The same way that English red can be either blood-colour or the colour of red ink (dearg in Gaelic) or red-hair/fox-fur/copper colour (ruadh in Gaelic) – it signifies two completely different colours.

Different languages just have different boundaries on the colour spectrum that they place between different words for colours.

Different languages divide the colour spectrum up in different ways. The tips in Colours give a bit of an explanation: https://duome.eu/tips/en/gd
