J’ai un grand bureau, mais j’ai demandé un bureau plus grand

Why does grand go before the noun bureau , but plus grand goes after the noun?

because its an adjectif. when the adjectif+plus he goes after the noun.

some adjectives come before nouns, my teacher in high school taught me a cool mnemonic which he called "Brags"

B is beauty / beau/ Jolie

R is rank / premier/ dernier

À is aged / jeune/ vieux

G is goodness / bon/ mauvais

S is size. Exp- petit/ grand

All these adjectives (and maybe some others) have to come before the noun and not after.

"Plus grand" is not an adjective. It is speaking in the superlative.
