I'd guess the same reason "She is a Frenchman" or "She is an Englishman" wouldn't be acceptable English. Zij is geen Spanjaard; zij is een Spaanse.

English speakers don't say "He/she is a Spaniard" any more. It sounds almost rude. Contemporary usage would be "She is Spanish" or "She is a Spanish person" or "She is from Spain" (or similar).
