As a native speaker i'd like to say that "pöllöt seuraavat meitä" is the official way to say it but in finnish it's okay to say "pöllöt seuraa meitä". It's colloquial language :)

Most of the course is clearly just standard Finnish (kirjakieli). I would expect some later lessons to cover some puhekieli stuff.
