Tous vs toutes? How to decide?

"Chemise" is feminine.

"Toutes les chemises", "tous les pantalons", "toute la famille", "tout le monde".

I don't understand why it's "les chemises" and not "des chemises" (all of the shirts).

Is Marie a toddler?

(Pois = peas, as well.)

Why is the name Marie not capitalised? I would lose a heart for making such a mistake in one of my responses....or ,at the very least be reprimanded for making a spelling error.
