Kävisikö "Sinä puhut sujuvasti japania."? Ja englanniksi "You speak Japanese fluently:" "fluent Japanese" somehow sounds odd.

I don't think "you speak fluent Japanese" sounds odd at all. It's a common usage--you can find many examples of this phrasing online.
