Kun käytetään sanaa "tai", olettaa kysyjä, että vastaaja voi aivan hyvin kertoa, ettei hän halua kumpaakaan, tai ehkä hän haluaa jotain muuta.

Jos käytetään sanaa "vai", on oletuksena se, että vastaaja ottaa joko maitoa tai sokeria, muita vaihtoehtoja ei ole.

Why would is 'tai' the preferred word? Shouldn't it be 'vai' as it is a question?

I think that 'vai' can be used in a question if it is a closed 'this or that' (so the only option would be milk or sugar) and 'tai' if another answer can be provided.

I think that is the case, but don't quote me on that as I am still on a very long learning journey myself!

My understanding is that 'vai' is when the answer would be one or the other (eg hot or cold), but 'tai' is when it could be either/or or both (milk or sugar or both milk and sugar).

In this case this is correct, since you can have both milk and sugar. Saying ”vai” would mean you can have either milk or sugar but not both.
