"datum van vandaag" is not okay?

You need the article. If you rephrase it in English, "today's date" also becomes "the date of today".
I thought all words ending in -um were het-words

Vandaag datum doesn't make sense, like today date doesn't make sense.
How about "vandaags datum"?
That is not used. You could however say Jeroens datum if it's Jeroen's date (only calendar date not meeting someone, that's either afspraakje or date in Dutch).
How would you literally say, 'the date today', as in 'what is the date today?'. 'De datum vandaag'?
Interedting i would have guessed a sinplification like vandatum would be used like for other day based description, i wonder why this is an exception
