Why is it not "lo" sapone according to the rule; 'lo' before 's' & 'z'?
Lo is used with masculine words beginning with s + consonant : lo specchio, lo struzzo, lo scoglio, etc.

No, it's always "lo" before z (Italian words can't start with z + consonant anyway).
