Why "in" and not "sulla"

Why is it not: "Loro mettono il formaggio sul tavolo." ?
Non capisco. Any help? E cosa è "tavola"?

Thanks. That helped a lot. And I now actually understand what is the difference between "il tavolo" and "la tavola". Even the thing with the restaurant with the tables there, is perfectly clear. Because something similar we have in Serbia. Only dinning table in one's home has a priviledge to be called differently. It has to do something with the hearth of the home.
