Can "afspraak" also mean "meating"? Admittedly, I didn't check the hint, just went for "maybe afspraak comes from afspreken" and "appointment" does make more sense.

Normally a meeting if it is simply meeting with people, it's een afspraak. If it is to discuss things (have an assembly) and a more official context (basically if the meeting has an agenda) is usually is een vergadering. Also a date is een afspraakje.

Yes. When I schedule a meeting with colleagues at work, that would be called an 'afspraak'.
