'lettuce' is one of the translations shown on screen for 'insalata', so why isn't ' 'you eat (the) lettuce' acceptable?!

We don't generally say 'the lettuce'. But if you were referring to a specific dish or
leaves of lettuce, you would say it.

For one, there's a period at the end of the sentence. But even if it were indeed a question, it would still be in present tense, not in the past as you put it.
