In current Italian "Stiamo dicendo quello" is far from realistic. If this is an answer to a previous statement to reinforce the fact that what the statement says is what we are saying the spoken form would be "È quello che stiamo dicendo" ("It is what we are saying"), but such a word order is complicated by emphatic dislocation. The most natural spoken translation should be "Lo stiamo dicendo" or "Stiamo dicendolo" with unstressed pronoun. Eventually, if we want to be literal and a demonstrative is needed the Italian language has "ciò" which unfortunately is quite formal and used mainly in written form: "Stiamo dicendo ciò" is more correct than the unnatural “Stiamo dicendo quello” but it is quite unusual nonetheless.
Per me "Stiamo dicendo quello"è una traduzione accettabile. Tutto dipende dal contesto.
