Is "eles pensam sobre liberdade" correct as well? If yes, which one do you usually use?

It is also correct. But most of time we say pensar + em.

I'm thinking about it = Eu penso em isso/isto ?

When we have "em" + este, esta, estes, estas, esse, essa, esses, essas, aquele, aquela, aqueles, aquelas, isto, isso, aquilo, we always link. So we have: neste, nesta, nestes, nestas, nesse, nessa, nesses, nessas, naquele, naquela, naqueles, naquelas, nisto, nisso, naquilo. So, your example is: eu penso nisso/nisto. Eu estou pensando nisso/nisto ;)

How about: "They think IN freedom." ? (As opposed to being restricted by... whatever can restrict people's free thinking)

Could "They think freely" be accepted?

No, it would be "eles pensam livremente".

    Does liberdade also mean liberty?
