I have waited a long time just to learn this sentence in Danish.

"....parts of the human." is not natural. It would be "parts of the human body", or "parts of humans".

Help me here...is the plural form of menneske (human) mennesker not mennesket (the human)?

You are correct. The Danish sentence is strange. "Mennesket" is the general collective name for "The human", which, in this case, in English is normally referred to as "The human body"; certainly not "Humans".
