what's the difference between "bons" and "bonnes" in french?

e.g. Les frites sont bonnes.

Why I can't use bons in here?

You cannot use "bons" because "frite" (the singular form of "frites") is feminine ("bonnes" is the plural feminine form of "bon", so "bons" would not work here).

Bons and bonnes are the plural forms of bon and bonne, but you can only use bonnes for feminine plural objects and bons for masculine plural objects.
