Or they're using the "no-poo" fad that a bunch of people are starting to follow. I guess baking soda, if used properly, is a good alternative?

I've been using baking soda for my hair (and body) now for about 8 years and I love it.
When using both, you're making the pH of your hair swing wildly between alkaline and acidic, which is really damaging over time.
Some research has shown it makes no difference (apart from make your hair smell nice of course)
In Brazil the word "shampoo" is much more used than "xampu"... Xampu was a try of "portuguesement" of the word shampoo.
