Is echtgenoot/echtgenote very formal, like saying "spouse" in English, or is the normal term for a husband or wife?

In colloquial speech, you'll normally hear man and vrouw.

Right, I get that. Would it be oddly formal to say "echtgenoot", normal, or what?

It's like saying spouse in English. Some people might use "echtgenoot/echtgenote" more often though generally people will use "man/vrouw".
