Estoy vs Yo soy?

Hi I'm having trouble understanding which one to use. I know they both mean I am but which one are you supposed to use? Thanks

P.L.A.C.E.

P - Position (e.g. Estoy sentado - I'm sitting)

L - Location (e.g. Estoy en mi casa - I'm in my house)

A - Action (e.g. Estamos comiendo manzanas - We are eating apples)

C - Condition (e.g. Estoy enferma hoy - I am sick today)

E - Emotion (e.g. Estoy triste - I am sad)

SER:

D.O.C.T.O.R.

D - Description (e.g. Soy Annie - I am Annie)

O - Occupation (e.g. Somos estudiantes - We are students)

C - Characteristics (e.g. Juan es romántico - Juan is romantic)

T - Time (e.g. Son las tres - It is three [o'clock])

O - Origin (e.g. Maria es boliviano - Maria is Bolivian)

SOY = SER

Estoy is used when describing a place or feeling. Yo soy is used when your describing yourself or something.
