Are yrke/karriär/jobb interchangeable, or do they refer to specific things? I know in English "job" is more general than "career" or "profession," but "career" and "profession" are similar.

Yrke, jobb and arbete are largely interchangeable. Yrke is relatively rare today, but not at unheard of. Jobb is most common.

Karriär refers to a career, the long term development of a work.

I put 'selects' a profession and it was counted wrong. Is 'select' not a synonym for choose or pick?

"Job", sure. "Job field" I'd say is a bit of a stretch; I'd translate that as "arbetsområde".
