I heard "ska vi ta en snabbis till maten" at first...

Why till and not med here?

That's a very good question! And unfortunately I don't know why, but we always say "till" about what to drink with the food:
vitt vin till förrätten
öl till maten
portvin till efterrätten
cognac till kaffet

And the same goes for parts of a dish, I've found. Thus we say that vi äter potatis till biffen ("we eat potatoes with the steak") when speaking about the components. But when speaking about the dish as a whole, we say it with med or och, as in vi äter biff med/och lök ("we eat steak and onion").

'biff med lök' is a dish.

What is a snaps?

You can read about snaps here.

I got confused with this one, interpreting the meaning as "another" schnapps (en snaps till), and assuming that "with" ("maten") was implied. After five years, I don't remember coming across this sentence before.

Does this imply taking some food to a party with a bottle of snap, ie BYOB and food? Or drinking some snaps with the food one is eating?

Definitely the latter.
