Translation:Eu sou vegetariano.
Hmm question about this one. I wrote down, "Eu sou um vegetariano" which to me appears to be the correct translation, considering there is an 'a' in the sentence, and not just "I am vegetarian". Please explain
when we write about occupation/profession we don't usually translated 'a/an' (I am a doctor = sou médico)

Only if you vegetarian for a short while like today. If it is a longterm thing/lifestyle use "Sou"
