All the Spanish vowels are pronounced just as they appear in the two words "Poké" and "Pikachu".

Spanish A sounds like the a in Pikachu

Spanish E sounds like the é in Poké

Spanish I sounds like the I in Pikachu

Spanish O sounds like the o in Poké

Spanish U sounds like the u in Pikachu

The vowel sounds are very similar. I won't say identical because I'm not a phonetics/linguistics expert and therefore can't be sure about that, but very, very close.

I wonder if Japanese borrowed the word from Spanish. In Japanese, the word is written in katakana as パン, which means it is a loan word from a non-Asian language. :)

It comes from the Portuguese pão, so it's related to Spanish. :) An article on Portuguese loan words in Japanese

This I because both Japanese and Spanish have the same vowel pronunciations. Pokémon is Japanese though. Also bread was brought to Japan by the Portuguese and Tempura is also Portuguese

Yes, it is. The diéresis (or umlaut) is there to tell you that you pronounce both the U and the I (unlike in, say, "guerra," where the U is just there to make it a hard G sound), but it does not change the sound that the U makes.

If you listen closely to the theme song (https://www.youtube.com/watch?v=JuYeHPFR3f0 ) you can hear that it's pronounced like the Spanish E, not the English long-E sound. (I was corrected many, many times by a small boy several years ago.)
